Much of what appears on the table has grown, ripened or been crafted close by: vegetables from nearby fields, berries ripened in the mountain sun, locally brewed beer and regional wines, milk and cheeses from mountain farms, bread from village bakeries, speck from traditional butchers and fish raised in the clear waters of the Passer river. The result is acuisine that is honest, seasonal and unmistakably shaped by its surroundings. In the Passeiertal Valley, agriculture and tourism have long gone hand in hand. Local producers, restaurateurs and hoteliers work closely together, united by a shared respect for the landscape that sustains them. Some hotels even tend their own gardens and herb beds, bringing the freshness of the valley straight into the kitchen.
The local quality label “fir diër” – from us to you – reflects this spirit. It stands for authentic products, short journeys from farm to table and the personal connections that make them possible. Sustainability here is not a promise but a daily practice. In 2024, the Passeiertal Valley was recognised by the international certification body Green Destinations as meeting the GSTCrecognised standard of IDM South Tyrol. Yet more important than the label itself is the path behind it: working with awareness, respecting natural resources and shaping the future together.
