Big Cheese? Yes, if we're talking about the delicious dairy products from the Lenkhof farm dairy in Avelengo/Hafling! Georg Aichner, young farmer at Lenkhof farm, offers products from his own sustainable farm in the farm shop.

Innovative and sustainable
Georg Aichner from the Lenkhof farm in Hafling in South Tyrol attended agricultural school and worked as a carpenter before discovering his passion for cheese production. The idea of making cheese from the farm's own milk grew out of his desire to make his parents' farm financially independent and thus sustainable. In 2020, he went into direct marketing and opened his farm shop at Lenkhof farm in Hafling.

For Georg, everything that makes the difference in terms of flavour and quality comes together in a good piece of cheese: time and attention, craftsmanship and, of course, high-quality milk. Georg swears by raw milk. Natural hay milk, which contains the biodiversity of the local grasses and herbs of the Tschögglberg high plateau and always gives the cheese a slightly different flavour. A flavour experience for which the young farmer spares neither effort nor the strictest hygiene requirements.

He currently cultivates around 10 hectares of meadows and keeps 15 dairy cows and 10 young cattle in the barn. 50 laying hens and 30 quails provide the farm with eggs, and 15 bee colonies supply delicious honey.

Georg is convinced that good cheese must be flavoursome and aromatic and smell of "more" as soon as it is unpacked. In order to meet his own high standards, he tried out and experimented a lot until he was satisfied with the result. Hard cheese, semi-hard cheese, soft cheese, fresh milk, yoghurt, drinking yoghurt, frozen yoghurt ice cream for those with a sweet tooth in summer and butter can now be found on the shelves and in the farm shop's counter fridge.

Wide range from the farm and garden
In addition to the various types of cheese and dairy products, the home-made Lenkhof range also includes honey, jams, chutneys, pickles and seasonal fresh vegetables from the farm's own garden. The range has recently been expanded to include visually appealing wooden items such as caskets, boxes and slicing boards, which have been personalised with wood laser engraving. A visit to the farm shop is always worthwhile!

Erika and Elisabeth are mother and daughter. Together with their family they run the Eichernhof in Vöran. A beautiful farm a little below the village, surrounded by meadows and forests. With young cattle, chickens, fruit trees, bees, an old mill and a large garden where fresh vegetables, fruits and all kinds of herbs thrive.
